Kaiseki definition: A style of traditional Japanese cuisine in which a series of very small, intricate dishes are prepared. The meal is characterised by small portions, artful presentation and an emphasis on fresh seasonal ingredients. 

At the heart of kaiseki dining is the Japanese principle of shun - taking ingredients at its peak of freshness. Thus, dishes are presented simply to focus on each ingredient's height of natural beauty.
